Fake CheeseCake


I love cheesecake. It is probably my favorite dessert. But there really isn't that much about cheesecake that is healthy. So I found this recipe, and I fixed it up a little. It doesn't have the same texture of cheesecake, but it does hit the spot. It is also a lot easier to make. I tried to get a nice shapely pie piece out, but it didn't happen. So I put it in a bowl. I hope you enjoy it!

Fake Cheesecake

Crust:
1 cup almond meal
1/4 c butter, softened

Filling:
1 pint of whipping cream
2 pakages of cream cheese
1 tablespoon vanilla
5 tablespoons maple syrup

Topping:
16 oz. freash or frozen strawberries, thawed if frozen
1 teaspoon lemon juice
4 tablespoons maple syrup

Preheat oven to 375
  1. For the crust mix the almond meal and butter together. Press the mixture along the bottom of a pie dish. Bake at 375 for about 15 minutes. Cool.
  2. For the filling beat the whipping cream in a large bowl until it forms peaks. Mix in cream cheese until smooth. Add maple syrup and vanilla. Put on top of the cooled crust.
  3. For the topping puree the strawberries. Place them in a saucepan over medium heat until warm. Add lemon juice and maple syrup
Note: I wouldn't put the topping on the entire cheesecake. I would just do one piece at a time. Store the topping in a separate bowl in the refrigerator.
