I love cheesecake. It is probably my favorite dessert. But there really isn't that much about cheesecake that is healthy. So I found this recipe, and I fixed it up a little. It doesn't have the same texture of cheesecake, but it does hit the spot. It is also a lot easier to make. I tried to get a nice shapely pie piece out, but it didn't happen. So I put it in a bowl. I hope you enjoy it!
Fake Cheesecake
Crust:
1 cup almond meal
1/4 c butter, softened
Filling:
1 pint of whipping cream
2 pakages of cream cheese
1 tablespoon vanilla
5 tablespoons maple syrup
Topping:
16 oz. freash or frozen strawberries, thawed if frozen
1 teaspoon lemon juice
4 tablespoons maple syrup
Preheat oven to 375
- For the crust mix the almond meal and butter together. Press the mixture along the bottom of a pie dish. Bake at 375 for about 15 minutes. Cool.
- For the filling beat the whipping cream in a large bowl until it forms peaks. Mix in cream cheese until smooth. Add maple syrup and vanilla. Put on top of the cooled crust.
- For the topping puree the strawberries. Place them in a saucepan over medium heat until warm. Add lemon juice and maple syrup
