Chili


   Chili always seems to make it to our plate every month. It just never gets old. If you are like my husband then your chili requires a lot of cheese and crackers. My little boy even knew what I was cooking before I told him. I know chili is one of those meals that everyone can make, but I thought I would give you my version of it.

Chili

1 lb. ground beef
1 medium onion, chopped
1 clove garlic, finely chopped
1 can diced tomatoes, undrained
1 can tomato sauce
1 tablespoon chili powder
3/4 teaspoon ground cumin
1/2 teaspoon cinnamon
1/2 teaspoon red pepper
1/2 teaspoon salt
1/4 teaspoon pepper
2 cans pinto beans, kidney beans, or black beans (I mix and match)

  1. Cook beef, onion and garlic over medium heat, until beef is done.
  2. Stir in remaining ingredients, except the beans. Heat to a boil; reduce heat. Cover and simmer 1 hour.
  3. Stir in beans, heat to a boil; reduce heat and simmer uncovered 10 minutes.
