Cole Slaw


This goes wonderfully with sandwiches or hamburgers. I made this the other day and it was very tasty! Plus cabbage is packed full of vitamin C!

Cole Slaw

1 head of cabbage, red or green, finely shredded
2 carrots, peeled and grated
1 small red onion, finely chopped
1 tablespoon celery seeds
1 teaspoon Dijon-type mustard
2 tablespoons plus 1 teaspoon raw apple cider vinegar
1/2 cup extra virgin olive oil
1/4 cup sour cream

  1. Mix together the cabbage, carrots, onion, and celery seeds in a large bowl.
  2. In a small bowl mix together mustard, vinegar, olive oil, and sour cream.
  3. Pour dressing over the vegetable mixture. Mix well and chill for several hours.
