So I made these the other night into burritos. They are very satisfying! They don't quit taste like regular tortillas, they are a little sweeter, but they did the job. They key it to make sure you get them as thin as possible. I have noticed with eating coconut flour that it will fill you up a lot quicker than most flours. You can fill this up with beans, or some taco beef made with a homemade Taco Seasoning.
Coconut Flour Tortillas
1 tablespoon coconut flour
1/16 teaspoon baking powder
1 egg
2 tablespoons water
- Mix all the ingredients together in a bowl until there are no lumps.
- Pour into a preheated pan over medium to medium-high heat.
- When you pour this swirl the pan around to make sure you get it as thin as possible.
- Cook until edges are brown, then carefully flip it over and cook it for about 30 secs.
Did you use the whole egg or just the egg white? Most recipes I have seen call for 2 egg whites and say that using an egg makes the tortilla come out more crepe-like. I haven't tried either variation and I'm trying to weigh the recipes i.e. see which one is more comparable to a tortilla. Your thoughts?
