Coconut Flour Tortillas

     So I made these the other night into burritos. They are very satisfying! They don't quit taste like regular tortillas, they are a little sweeter, but they did the job. They key it to make sure you get them as thin as possible. I have noticed with eating coconut flour that it will fill you up a lot quicker than most flours. You can fill this up with beans, or some taco beef made with a homemade Taco Seasoning.

Coconut Flour Tortillas

1 tablespoon coconut flour
1/16 teaspoon baking powder
1 egg
2 tablespoons water

  1. Mix all the ingredients together in a bowl until there are no lumps.
  2. Pour into a preheated pan over medium to medium-high heat.
  3. When you pour this swirl the pan around to make sure you get it as thin as possible.
  4. Cook until edges are brown, then carefully flip it over and cook it for about 30 secs.
*Makes 1 tortilla

  1. Did you use the whole egg or just the egg white? Most recipes I have seen call for 2 egg whites and say that using an egg makes the tortilla come out more crepe-like. I haven't tried either variation and I'm trying to weigh the recipes i.e. see which one is more comparable to a tortilla. Your thoughts?
